Restaurant Manager (Fine Dining)

Overview:
Our client is launching an exciting new fine dining restaurant and is seeking an experienced Restaurant Manager to oversee the day-to-day operations of the establishment.
The successful candidate will be a hands-on leader with a passion for exceptional customer service, fine dining standards, team leadership, and strong financial management. This role requires someone who can create memorable guest experiences while ensuring the restaurant operates efficiently and profitably.
Key Responsibilities:
Operations Management
Oversee the daily operations of the restaurant.
Ensure exceptional guest service and maintain fine dining standards at all times.
Manage reservations, seating plans, and guest relations.
Address customer concerns professionally and effectively.
Maintain high standards of cleanliness, presentation, and compliance.
Staff Management:
Recruit, train, mentor, and manage front-of-house staff.
Develop staff schedules and manage attendance.
Conduct performance management and employee development.
Foster a positive and professional team culture.
Financial Management:
Manage restaurant budgets and financial performance.
Monitor food and beverage costs, labour costs, and operating expenses.
Analyse sales and profitability reports.
Implement cost-control measures to maximise profitability.
Manage cash-ups, banking, and financial reporting.
Work closely with the owner and chef regarding pricing strategies and profitability.
Inventory & Supplier Management:
Monitor stock levels and inventory control processes.
Manage supplier relationships and ordering procedures.
Minimise wastage and stock losses.
Ensure accurate stock counts and reporting.
Compliance & Administration:
Ensure compliance with health, safety, and food handling regulations.
Maintain restaurant policies, procedures, and operational standards.
Complete management reports and administrative duties accurately and timeously.
Minimum Requirements:
Minimum 5 years' experience as a Restaurant Manager within a fine dining or upscale hospitality environment.
Strong financial acumen with experience managing budgets, food costs, labour costs, and profitability.
Proven leadership and staff management experience.
Excellent customer service and guest relations skills.
Strong administrative and reporting abilities.
Experience with restaurant POS systems and stock control processes.
Ability to work evenings, weekends, and public holidays as required.
Own reliable transport preferred.
