Job Summary
Farm to Table Chef/Gardener madagascar We are looking for organic conscious farm to table Chef/Gardener. The role is responsible for cultivating a large variety of organic produce and herbs, in 4 different climatic zones of Madagascar and creatively incorporating them into seasonal menus across our 3 tourism properties. This unique role blends horticultural experience with culinary flair, ensuring that freshly harvested ingredients are used to prepare nutritious, flavourful dishes. The position requires a strong commitment to sustainable and organic gardening practices, as well as a passion for innovative, garden-to-table cuisine. Key duties include planning and maintaining an organic kitchen garden in our 3 existing properties as well as setting up our 6 hectare farm just outside the capital Antananarivo, sowing and harvesting crops throughout the year, and collaborating with kitchen staff to design menus based on what is seasonally available. Innovative uses of harvested products and excesses, including pickling, jams, chutneys, drying and preserving would be required, as would sourcing seasonal fruit from other areas of the country. The Organic Chef/Gardener also manages composting, pest control using natural methods, and keeps detailed records of planting cycles and yields. Candidates should have experience in both professional cookery and horticulture, excellent organisational skills, and an enthusiasm for sharing knowledge about sustainable food and gardening practices. The successful candidate will be based primarily in the capital city, however they would spend significant time in our properties working with the kitchens and gardeners. There will initially be 2-3 staff at the main farm in the capital to manage as well as a head gardener in each of the properties. Investigating additional revenue steams for excess product or innovative uses of existing locally sourced goods would be useful also. Details Contract length initially 18-months to 2-years extendable Start Date: April-June 2026 Key qualities: flexible, enthusiastic, able to work independently, proactive Salary: Unknown at this stage but starting from $20,000 plus accommodation and transport Conditions MCC will provide 2 return flights per calendar year to/from Johannesburg We will cover visa costs and provide 30 working days holiday per calendar year We will provide accommodation in the capital either on the farm or nearby, we will also provide transport as needed When travelling to our 3 properties we will cover all related travel expenses and food etc You should have a clean bill of health and a clen driving licence Madagascar will require a Criminal record check to obtain a visa We will pay your salary monthly into your chosen bank account as a nett amount (we pay from Mauritius so there should be no tax taken from SA).
