Job Summary
We’re looking for a very special person to join our family on the banks of the Zambezi. This is not a traditional F&B management role . We are looking for someone who genuinely loves to cook — someone who is confident and capable in a professional kitchen, enjoys being hands-on with food, and can work alongside and mentor a small kitchen team. At the same time, you’ll need the experience, maturity and organisational skills to help with the wider day-to-day operation of a small, luxury boutique lodge. If you’re the kind of person who can happily move from creating a beautiful lunch in the kitchen to sitting down with guests over dinner, checking the housekeeping standards, placing an order with a supplier and helping your team through a busy service ; then we’d love to hear from you. ABOUT US We are an owner-run; eco-friendly luxury boutique lodge ; accommodating just 16 guests, with a sister horse safari camp for 8 guests nearby. We are a small, hands-on operation, and our team is at the heart of everything we do. We’re looking for someone who cares deeply about our guests, food, nature, conservation, community, animals and wildlife — and who understands that exceptional hospitality is created through the small details, the people behind the scenes and a genuine desire to make every guest feel special. It’s about leading by example, getting stuck in, supporting your team and bringing out the best in the people around you. THE ROLE The Kitchen & Food Experience This is a hands-on culinary role . You must genuinely enjoy cooking and be confident working in a professional kitchen. You will: Cook alongside our kitchen team and be hands-on with daily food preparation and service. Help develop and continually improve our food offering. Prepare and deliver delicious, beautifully presented meals for a small number of discerning guests. Be confident adapting meals to individual guest preferences and dietary requirements. Lead by example and mentor our small kitchen team. Maintain high standards of food quality, presentation, hygiene and consistency. Manage food and beverage budgets, stock control and purchasing. Work with multiple suppliers in Livingstone and the surrounding areas. Minimise waste and ensure the kitchen operates efficiently. We are not looking for someone who simply manages the kitchen from an office. If your experience is primarily F&B administration, budgets, stock control and reporting — but you don't enjoy cooking yourself — this is probably not the role for you. We need someone who can manage the operation and put on an apron. Guest Experience Host and engage with guests some evenings during the week. Be comfortable talking to guests about food, ingredients and the experiences we offer. Help create the warm, personal and memorable guest experience that defines a small owner-run lodge. Take pride in anticipating guest needs and making every stay feel special. Team & Lodge Operations Alongside the culinary side of the role, you will: Lead; manage and mentor your team. Maintain high standards throughout the lodge. Work closely with the Senior Managers across the operation. Be willing to get stuck in wherever needed ; particularly when things are busy. Assist with operational planning, safety and compliance. Support procurement, stock management and day-to-day operational requirements. In a small lodge, everyone helps everyone . No job is beneath anyone. WHAT WE’RE LOOKING FOR We’re looking for someone with a combination of strong culinary ability, lodge experience and natural leadership . You will ideally have: At least 5 years' proven experience in high-end lodge or hospitality management ; with strong references. Strong practical cooking skills and professional kitchen experience. A genuine passion for food and the confidence to cook for our guests. Experience developing menus and working with dietary requirements. A willingness and enthusiasm to be hands-on in the kitchen . The ability to mentor and develop a small kitchen team by leading from the front. A very good eye for detail and high personal standards. A genuine love of hospitality, travel and people. A love of the bush; animals, wildlife and living out of town . Excellent organisational and communication skills. Excellent computer skills and a strong command of written and spoken English. A valid driver's licence. The ability to work independently, take responsibility and remain calm when things get busy. After probation, we are looking for someone who is prepared to make a minimum 2-year commitment to the role. This is not a short-term stopover.
