VACANCY: MANAGEMENT COUPLE GM/CHEF (LIVE-IN) Location: Tsitsikamma-Plettenberg Bay Area Reporting to: Owners Salary: (Negotiable based on experience) OVERVIEW We are seeking a professional and versatile Management Couple to take full responsibility for the daily operations of our lodge (10 rooms) and restaurant (max.25 seatings). This is a live-in position for a positive couple that thrives in a "hands-on" environment with excellent guest relationships experience. We are looking for a combination of decent administrative expertise, creative culinary skill’s and light practical maintenance capabilities. The couple will be responsible for dividing the following duties based on their individual strengths, ensuring all areas are managed with excellence on a 4/5-star level. GENERAL MANAGEMENT & ADMINISTRATION • Oversee full lodge operations and ensure compliance with all general service standards. • Lead staff briefings, manage staff (13) rostering, and assist in hiring. • Manage the full reservation lifecycle: correspondence, daily arrival reports, and group bookings. • Assist owners in sales and marketing, handle all social media, updating OTA & TO rates, and attending industry events. • Maintain labour/legal compliance including Staff Contracts, OHS Act, and fire regulations. • Manage onsite and online guest feedback. CHEF; FOOD & BEVERAGE • Chef: Full menu planning, menu costings, and high-standard food preparation. • Manage kitchen stock levels, pricing comparisons, weekly shopping and weekly stock takes. • Oversee F&B operations: beverage/cocktail lists, bar stock, and dining/kitchen area cleanliness. • Supervise and train kitchen and floor staff while monitoring for waste reduction. HANDS-ON MAINTENANCE & GROUNDS • Property Upkeep: One partner must be capable of physically performing light repairs. • Monitor water tanks, heat pumps, and pool filtration systems. • Perform or willing to learn general technical repairs. • Conduct regular inspections of guest rooms and public areas to ensure all maintenance work is rectified. • Oversee the appearance of the grounds and pool area. LOGISTICS & SHARED DUTIES • Staff Transport: Responsible for daily transportation of local staff. • Front Office: Assist with guest check-ins and check-outs as needed. • Flexibility: Both partners must be willing to assist in any department during peak times or in the other's absence. MINIMUM REQUIREMENTS • Culinary Expertise: One partner must be a creative chef. • Hospitality Experience: Background in lodge management, reservation software (Semper)and guest relations. • Maturity: A professional, self-motivated approach with a high level of responsibility and comfortable reporting to owners.
