Job Summary
HEAD CHEF – WELL-KNOWN ESTATE (FRANSCHHOEK REGION) OVERVIEW: Our client, a well-known and established wine estate located in the Franschhoek region, has a vacant position for an experienced and talented HEAD CHEF. The estate is renowned for its upmarket restaurant and tasting room, picnics, wedding and event facilities and gardens, to mention a few. The estate also provides several upmarket holiday cottages. The ideal candidate will have at least 3 years previous experience as a Head Chef, with a great passion for the industry, ability to create innovative menus, up to date with culinary trends and ability to lead and manage a profitable kitchen operation. Requirements: 1. Culinary Qualification and proven track record. 2. Previous experience in similar position 3. Creative in menu planning 4. Experience in stock control, purchasing and costing 5. Kitchen staff management 6. Working knowledge of service within the food and beverage sector 7. Fully bilingual (English & Afrikaans) 8. Own reliable transport and valid driver’s license 9. Clear criminal record 10. Excellent interpersonal skills, with an ability to work with person of all walks of life 11. Strong leadership with the ability to motivate and drive the kitchen team. 12. Good leadership skills 13. Good staff management skills 14. Preferably reside in Franschhoek or Cape Winelands Key Responsibilities: • Daily operation of the kitchen (staff, equipment, stock, costing, preparation, service, stock control, manage wastage, kitchen hygiene, kitchen staff training, etcetera) • Design menus with the focus on creating a personal flair (create a unique/specialty dish to have guests returning) • Ensure kitchen staff is well trained in food preparation/cooking to enable them to fully operate the servings on your days off • Supervise all food preparation and presentation to ensure quality and consistent high-quality standards • Ensure that dishes leaving the kitchen is checked for quality, quantity, and presentation • Conduct stock counts and submit reports to Hospitality Manager • Establish and maintain strong, effective relationships with Front of House, hospitality staff and suppliers • Kitchen efficiency. • Setting up menus and costings. • Optimize utilization of all equipment. • Oversee and ensure maintenance of all catering and kitchen equipment.
