? ?? ??????????? ??????????? is recruiting on behalf of a new Restaurant based in Cape Town with a distinct farm-to-table identity for a talented, ingredient-driven ???? ???? This is a great opportunity to take creative ownership of a kitchen with a clear, unwavering identity. The restaurant is built around a single, exceptional ingredient - premium lamb sourced directly from Karoo farms. The successful candidate will take full ownership of menu development - designing seasonal, nose-to-tail lamb menus alongside elevated vegetable plates that reflect what the land is offering at any given moment. You will cultivate and manage direct partnerships with Karoo farmers and organic produce suppliers, acting as both creative collaborator and committed customer. Leading the kitchen brigade, you will set the tone, hiring with intention, mentoring generously, and holding high standards with steadiness rather than pressure. Operationally; you will oversee food costing, wastage management, and full HACCP compliance, while also contributing to the broader brand identity: how the food looks, how it is described, and how it makes a guest feel from the very first bite. ➡️ A food portfolio must be submitted with your application that clearly displays your creativity, innovation, and attention to detail. (All images will be checked to ensure ownership) Requirements • Minimum 5 years of senior chef experience in a kitchen with serious culinary intent - fine dining, modern bistro, or farm-to-table environments. • Demonstrated nose-to-tail lamb expertise: a thorough understanding of the ingredient, its full utilisation, and how to build it thoughtfully across a menu. • A natural ability to create dishes that are composed, restrained, and visually considered without being fussy. • Proven people leadership: the ability to build a cohesive brigade, develop junior team members, and maintain high standards through calm and consistency. • Sound commercial acumen - a working knowledge of food costing, menu pricing, and the practical business of running a high-performing kitchen. • A genuine connection to local and seasonal produce, with existing or cultivatable relationships with artisan and farm-direct suppliers. • Must already reside in Cape Town.
