Role Overview: An excellent opportunity for a skilled and passionate Sous Chef to join a luxury all-inclusive safari lodge in Northern KwaZulu-Natal. This role is ideal for a strong culinary professional who thrives in a remote bush environment and is committed to delivering exceptional, high-end dining experiences for discerning guests. ? Key Responsibilities: ?️ Kitchen Operations & Support • Assist the Head Chef with daily kitchen operations • Ensure smooth and efficient service across all meal periods • Maintain consistent food quality, taste, and presentation standards • Step in and lead the kitchen in the absence of the Head Chef ?? Food Preparation & Execution • Prepare and present high-quality dishes in line with lodge standards • Support menu planning and contribute creative culinary input • Ensure all dietary requirements and guest preferences are met • Maintain portion control, consistency, and plating standards ? Stock Control & Kitchen Management • Assist with stock control, ordering, and inventory management • Minimise wastage and ensure efficient use of ingredients • Ensure proper storage, rotation, and labelling of all food items • Support cost control and kitchen efficiency measures ? Hygiene, Safety & Compliance • Maintain strict hygiene and food safety standards at all times • Ensure compliance with HACCP and lodge SOPs • Keep kitchen areas clean, organised, and audit-ready • Promote a safe and disciplined working environment ? Team Leadership & Development • Supervise and support junior kitchen staff • Assist with training and development of the kitchen team • Foster a positive, professional, and team-driven kitchen culture • Lead by example with strong work ethic and discipline ? Requirements: • Formal culinary qualification essential • Previous Sous Chef experience in a luxury lodge, hotel, or fine dining environment • Strong all-round kitchen skills and leadership ability • Good understanding of food safety and hygiene practices • Ability to perform under pressure in a remote bush environment • Strong organisational and time management skills • Flexible to work shifts, weekends, and public holidays ?
