? ?? ??????????? ??????????? is currently partnering with a highly respected, conservation-led luxury safari operator in the Kruger National Park to recruit a skilled and driven ?????? ???? ???? for one of their premier lodges. The food philosophy celebrates the richness and diversity of the African continent, combining locally sourced ingredients with international culinary expertise to create menus that are both innovative and deeply considered. Working closely with the Head Chef, the Senior Sous Chef will oversee kitchen operations in their absence, ensuring that all culinary output consistently meets the lodge’s high standards. The role involves supervising kitchen teams, assisting with menu planning and execution, maintaining quality control, managing stock and procurement, and upholding strict health and safety practices. This position also plays a key role in mentoring junior staff and supporting environmentally responsible kitchen practices. Key Requirements: At least 4–5 years’ experience in a similar role within a luxury lodge, 5-star hotel, or high-end hospitality environment A strong administrative ability, particularly in training and development. Strong culinary knowledge with the ability to contribute to menu creation and refinement Exposure to high quality grill restaurants Solid understanding of kitchen operations, workflow, and service coordination Comprehensive knowledge of food safety, hygiene standards, and safe kitchen practices Pastry skills (including breads, pastries, desserts, and ice creams) will be beneficial Experience in stock control, ordering, and minimising waste through effective kitchen management A genuine interest in sustainability and eco-conscious practices within a kitchen environment Strong interpersonal and communication skills, with the ability to collaborate across departments South African citizenship or valid work permit essential Contactable references required ➡️ A food portfolio must be submitted with your application that clearly displays your creativity, innovation and attention to detail.
