Kendrick Recruitment is seeking an experienced Regional Chef Trainer to join a leading lodge group, based in Tanzania. This is an exciting opportunity for a highly skilled and creative culinary professional to take responsibility for food standards, chef development and menu innovation across a collection of luxury lodges in East Africa. The successful candidate will work closely with lodge chefs and operational teams to ensure consistently exceptional food quality, presentation and guest experiences. Key responsibilities: Review and develop comprehensive rotating menus across the lodges, including lodge meals, bush picnics, snacks and special dietary offerings Ensure all menus, recipes and presentation standards are consistently maintained Develop innovative new dishes and menus in line with current culinary trends Train chefs in creative bush dining and banqueting concepts Ensure food presentation consistently meets luxury hospitality standards Train and support chefs in managing special dietary requirements Develop memorable and personalised food experiences for guests Implement; monitor and continuously improve kitchen standards across multiple properties Rotate between lodges to assess and elevate food quality, consistency and presentation Mentor; coach and develop chefs and kitchen teams Identify development opportunities and support internal career progression Train culinary teams in menu costing, kitchen controls, stock management and waste reduction Develop chefs’ understanding of presentation, storytelling and the overall guest dining experience Encourage guest interaction and greater chef visibility where appropriate Facilitate chef exchanges and knowledge sharing between properties Maintain strong communication with chefs, lodge and camp managers, HODs, operational teams and suppliers Work with procurement teams to identify quality local suppliers and support local sourcing initiatives Oversee wider food and beverage touchpoints, including coffee, tea, game-drive refreshments and guest bar offerings Contribute to culinary projects, budgeting and broader food strategy Maintain and update food presentation and styling guidelines Work with relevant consultants regarding dietary requirements and culinary standards Facilitate culinary workshops and collaborate with regional training teams Ensure culinary training is aligned with broader staff-development programmes Requirements: Minimum 10 years’ relevant experience within luxury hospitality, lodges or a high-end service environment Higher Diploma in Culinary Arts or a related culinary qualification Proven experience in training, mentoring and developing chefs and kitchen teams Strong experience in menu development and recipe creation Excellent understanding of food costing, stock control, waste management and kitchen systems Strong knowledge of special dietary requirements Excellent food presentation and plating skills Up-to-date knowledge of international culinary trends Strong leadership and mentoring abilities Excellent organisational and communication skills Ability to manage multiple properties and priorities effectively Creative; resourceful and able to think laterally Proactive approach to problem-solving and continuous improvement High levels of professionalism, integrity and accountability Genuine passion for creating exceptional culinary and guest experiences The ideal candidate will be a highly motivated, creative and hands-on culinary professional who enjoys developing people as much as developing menus. The role requires someone comfortable travelling between lodges, working with diverse teams and driving consistently high culinary standards across the region.
