Kendrick Recruitment is recruiting on behalf of a leading luxury travel company in Tanzania for an experienced Regional Chef Trainer. This is an exciting opportunity for a highly skilled culinary professional to lead food standards, training, and menu innovation across multiple lodges in East Africa. The successful candidate will be responsible for elevating culinary experiences, mentoring chefs, and ensuring consistent world-class service. Responsibilities: • Revise the complete 7-day menu for all East African lodges, including lodge meals, bush picnics, snacks, and special dietary menus, in line with the Food Styling Guide and approved recipes • Provide creative bush banqueting training according to the Food Styling Guide • Ensure presentation of all meals meets the Style Guide standards • Stay up-to-date with current food trends • Create new menus and recipes to enhance food service at all lodges • Train chefs on special dietary requirements and recipe selection • Advise, design, and train chefs on guest delight food concepts • Implement and monitor kitchen standards across lodges • Maintain effective communication with chefs, camp managers, HODs, lodge managers, and suppliers • Promote discipline, fairness, and professionalism as a role model • Encourage guest interaction, chef exchanges, and experience sharing • Train chefs on menu costing, kitchen controls, waste management, and food presentation storytelling • Focus on staff development to increase skills and promote internal growth • Rotate through lodges to upgrade food standards, quality, and presentation • Collaborate with procurement on local sourcing and supplier development • Oversee food and beverage elements including coffee, tea, game drive drinks, and personal bar • Contribute to project input, budgets, and alignment with company food strategies • Maintain and update styling guides and liaise with consultants regarding dietary requirements • Host annual culinary workshops and coordinate with regional training teams • Ensure alignment with academy training programs and skill development initiatives Requirements: • Minimum 10 years’ relevant experience in the service or luxury hospitality industry • Proven passion for creating exceptional food experiences • Experience in training, mentoring, and developing culinary teams The ideal candidate will be a highly motivated, creative, and organised culinary professional, capable of leading multiple teams across lodges while maintaining the highest standards of food quality, presentation, and guest satisfaction.
