? ?? ??????????? ??????????? is recruiting on behalf of an ultra-luxury safari lodge collection in the Serengeti ecosystem of Tanzania for an experienced and creative ?????? ???? ???? Our client is a world-renowned luxury safari brand with a strong conservation ethos, operating exceptional lodges and tented camps in one of East Africa’s most iconic wildlife regions. They are looking for a talented, hands-on pastry professional who is passionate about creating outstanding, beautifully presented breads, pastries and desserts in a remote, high-end bush environment. The successful candidate will take full ownership of the pastry section – from breads, croissants and Danish pastries to cakes, biscuits, ice creams, sorbets and plated desserts. The role includes developing menus in line with the lodge’s culinary concept, managing costs, ordering and stock rotation, upholding strict hygiene and safety standards, and training and developing the pastry team. Guest interaction and close teamwork with other departments are key to delivering a memorable dining experience. ? A food portfolio must be submitted with your application that clearly displays your creativity, innovation and attention to detail. (All images will be checked to ensure ownership). ???????????? · A recognised 3-year culinary qualification, or a minimum of 4 years’ experience in a comparable pastry leadership role. · Strong baking and pastry skills across breads, viennoiserie, cakes, biscuits, frozen desserts and plated desserts. · Experience in a luxury lodge, 5-star hotel or fine-dining environment will be a strong advantage. · Creative flair with the ability to develop and cost menus, and a good awareness of dietary requirements and allergies. · Sound understanding of food costing, kitchen budgets, ordering and waste control. · Thorough knowledge of food safety, hygiene protocols, cleaning procedures and kitchen health & safety, including fire safety. · Ability to lead, train and motivate a team, with working knowledge of labour relations and disciplinary procedures. · Well organised, with good time management and the ability to plan production around service times. · Computer literate. · Excellent communication skills and confidence interacting with international guests. · A genuine interest in sustainability and conservation, and willingness to live and work in a remote bush location. · A stable employment history & contactable references ?????? – On application with live in benefits ? ?????? ???? – Although we appreciate all applications received, we will only reply to those candidates who have the background and experience required.
