Role Overview: A senior culinary leadership role responsible for overseeing all kitchen operations, menu development, cost control, and team management to deliver exceptional dining experiences within a luxury safari lodge environment. ? Key Responsibilities: • Create, design, and implement innovative menus in consultation with Senior Management • Maintain strong understanding of dietary requirements and diverse culinary styles • Oversee procurement of all food, ingredients, and kitchen materials • Manage hygiene, cleanliness, and maintenance of all kitchen and storage areas • Develop recipes and maintain strict cost control and budget compliance • Conduct monthly stock takes and manage full inventory control • Take responsibility for kitchen profitability and financial performance • Lead, manage, and develop the kitchen team including recruitment and training • Conduct performance appraisals, rostering, leave management, and disciplinary processes • Build and maintain a strong, motivated, and skilled kitchen brigade • Ensure all staff comply with company policies and labour regulations • Assist with menu refinement, dish creation, and tasting sessions with management • Manage supplier relationships and ensure best value procurement • Maintain high standards of food safety, hygiene, and operational compliance • Support kitchen operations hands-on when required ? Skills Required: • Strong culinary leadership and people management ability • Excellent cost control and financial management skills • Strong organisational and planning capability • High-level understanding of hygiene and kitchen operations • Ability to manage diverse teams in remote environments • Strong communication and problem-solving skills ? Requirements: • Hospitality / Culinary qualification (essential) • Minimum 5 years’ experience in a similar senior kitchen role • Experience in luxury lodge or high-end hospitality environment • Strong knowledge of menu engineering and kitchen operations • Proven ability to lead teams in remote or high-pressure environments ?
