Purpose of the job:
- Control the ordering, purchasing and issuing of all stock including food and beverage goods
- To assist keeping food and beverage cost and quality within the set Village n Life guidelines
- To source quality stock including and cost effective ingredients
- Maintain the cleanliness and order of all stores
- Ensure safeguarding of stock
- Ensure accurate and complete stock counts
- Managing appropriate cost of sales levels as per company policy

Accountabilities:
- Close liaison with stock including food and beverage suppliers in order to obtain the best quality at the best price
- Ensure the safe receipt of all incoming stock including food and beverage products and check the following:-
- that the correct quantity of goods are supplied
- that the quality of goods meet expected standards
- that temperature controls and records are correct
- that items are delivered under correct conditions
- that the shelf life of products are adequate
- that all delivery details are recorded
- that all products are date stamped accordingly by security
- Ensure that all beverage items required are available
- Keep up to date with the latest trends and products
- STOCK MANAGEMENT, ISSUES & TRANSFERS
- Ensure that stocks are held within the company objective
- Ensure stock safeguarding - that all goods are promptly and securely stored, under supervision as necessary, in the correct manner
- Ensure that stock rotation is adhered to at all times and provide details of short-life products to the respective departments
- Establish issue times for all stores, restaurants, bars and external properties
- Issue all goods as requested and alert the departments to any request deemed unreasonable
- Ensure that the system of issues to bars, restaurants and external properties are carried out correctly
- Assume responsibility for the security of premises and keys in the stores areas. Ensure that areas are kept clean, tidy, yet accessible at all times and that broken stock is stored in the correct manner and utilised as a priority
- Ensure the correct working of mechanical storage equipment. Monitor and record the temperatures of all cold holding equipment and maintain the safe storage and issue of cleaning materials in accordance with company regulations.
- Ensure accurate and complete stock counts are taken and recorded
- DATA CAPTURING AND COST CONTROL
- Updating prices of items when necessary and on an ongoing basis
- Ensure that the computer input is carried out daily
- Ensure accurate cost of procured items is captured
- Assist with costing of new menu items and ensure accuracy
- Manage the departmental invoices and transfer journal documentation
- Undertake accurate stock counts and control checks on a weekly basis and report any losses to the financial manager
- Undertake accurate variance reports for all bars on a daily basis
- Ensures that the 10, 20 and 30 day food and 15 and 30 day beverage stocks are carried out timeously and accurately
- Balance stock purchases including food and beverage purchases with the creditor’s clerk at the end of each month
- Population and calculation of the food and beverage trade accounts
- Ensure that all month end reports are submitted to the finance manager by 2nd working day of the new month
- Provide sales analysis of items by restaurants on a monthly basis
- Request of compliance of all Village n life policies and procurement procedures from all restaurants, bars and external properties
- Request of compliance of the Village n Life procurement policy from all preferred suppliers
- Creating, amending and implementing procurement policies and procedures for the benefit of the company and operations
