Job Summary
Country Estate in the Pilanesberg area is seeking a highly disciplined and detail-driven Stock Controller to take full ownership of all stock operations across the property. This role requires strict control, accurate reporting and zero tolerance for unexplained variances. The successful candidate must have strong experience in hospitality stock control systems including HOPS, Lightspeed, and POS platforms. The Stock Controller is responsible for full accountability; control, accuracy and compliance of all stock across departments, ensuring correct stock levels; minimal wastage ; strong cost control and the prevention of losses or theft. Duties: Stock Management & Control: Take full responsibility for all stock across departments (camp kitchen, bar, water park, tuck shop and housekeeping) Ensure accurate receiving, issuing, transfers, and recording of stock Maintain real-time accurate stock records Prevent stock loss, theft, wastage, and misuse Enforce FIFO principles and correct storage procedures Stock Counts, Reconciliations & Variance Control: Conduct daily, weekly, and monthly stock counts Reconcile physical stock with system stock Investigate; explain, and report all variances Ensure zero tolerance for unexplained discrepancies Systems & Software (HOPS, Lightspeed, POS): Maintain accurate stock records on HOPS, Lightspeed, and POS systems Assist Head Chef with ensuring correct recipe linking, portion control, and automatic deductions Monitor sales vs stock usage for irregularities Generate stock, variance, usage, and valuation reports Purchasing & Supplier Coordination: Monitor minimum and maximum stock levels Support procurement planning and ordering Verify deliveries, invoices, and supplier pricing Report supplier discrepancies Cost Control & Waste Reduction: Monitor food, beverage, and consumable costs Track wastage, breakages, expired stock, and over-portioning Support initiatives to reduce waste and protect profit margins Compliance & Stock Policing: Enforce stock policies and internal controls Prevent unauthorized access to stock Report misuse, negligence, or suspicious activity Support audits and disciplinary processes Reporting & Administration: Prepare daily, weekly, and monthly stock reports Maintain accurate documentation including GRVs, invoices, transfer notes, and count sheets Ensure audit-ready stock records Requirements: At least 3+ years proven experience as a Stock Controller in hospitality, restaurant, or resort environments Strong experience using HOPS, Lightspeed, POS, or similar stock/inventory platforms Excellent numerical skills and attention to detail Strong Excel and reporting skills Firm; assertive personality with the ability to enforce controls High integrity, reliability, and accountability Ability to work under pressure and meet deadlines
