Sous Chef – Luxury Safari Lodge – Kruger National Park ? Kendrick Recruitment is currently seeking an experienced Sous Chef for a 4-month maternity cover contract at a luxury safari lodge in the Kruger National Park. The Role The Sous Chef will work closely with the Executive Chef/Head Chef and take full responsibility for the kitchen operation during their absence. The successful candidate will lead and develop the kitchen team while ensuring exceptional food quality, efficient cost control, hygiene, and smooth day-to-day kitchen operations. Key Responsibilities Manage; lead, train, and motivate the kitchen team in line with the lodge’s culinary standards. Oversee food preparation, quality, taste, presentation, portion control, and plating. Maintain effective kitchen administration, stock control, and ordering procedures to minimise shortages, wastage, and variances. Monitor departmental costs and implement creative solutions to meet budget requirements. Review monthly accounts, identify problem areas, and implement corrective action where required. Ensure all kitchen areas, fridges, stores, and equipment are maintained to the highest hygiene and operational standards. Maintain appropriate stock levels across fridges and stores. Ensure effective communication between the Kitchen, Management, and Front of House teams. Oversee the preparation and setup of meals and functions according to required standards. Attend meetings when required and provide strong, professional leadership to the kitchen team. Ensure all food is prepared efficiently and consistently to the highest standard. Manage kitchen assets responsibly and ensure equipment is maintained in good condition. Ensure all tasks are completed efficiently, within the required timeframes, and to the expected standard. Requirements Proven experience in a Sous Chef or similar senior kitchen role, ideally within a luxury lodge or safari environment. Sound knowledge of food preparation, kitchen hygiene, and food safety. Strong understanding of dietary and religious requirements. Good knowledge of menu compilation and current international food trends. Strong understanding of stock procedures, control, and cost management. Good product and supplier knowledge. Experience with planning, budgeting, and departmental administration. Ability to create, implement, and maintain control documents and training manuals. Basic understanding of accounting principles, including P&L statements and forecasts. Strong leadership, communication, organisational, and problem-solving skills. Ability to work effectively under pressure while maintaining consistently high standards. Package ? Kruger National Park ? Live-in ? 4-month maternity cover contract ?
