This is an incredible opportunity for a culinary professional who thrives in a high-end, remote island environment and is committed to delivering exceptional guest dining experiences ?✨ The successful candidate will support the Executive Chef in maintaining the highest culinary standards, ensuring consistency, creativity, and excellence across all food offerings while leading and inspiring a dedicated kitchen team. ?? Key Responsibilities: ✔ Maintain high standards of professionalism within the kitchen team ✔ Provide disciplined, inspirational leadership and drive kitchen productivity ✔ Ensure all financial controls, stock systems, and record-keeping are strictly followed ✔ Collaborate with the Executive Chef on menu planning and food quality standards ✔ Monitor food costs, budgets, and performance targets ✔ Attend daily HOD meetings and coordinate operational planning (arrivals, departures, maintenance, guest requests, special events) ✔ Ensure full compliance with health & safety, HACCP, and hygiene standards ✔ Oversee uniform standards and staff presentation ✔ Manage ordering within budget and cost per head requirements ✔ Oversee month-end stock takes and inventory control ✔ Ensure smooth daily kitchen and staff canteen operations ✔ Implement and maintain cleaning rosters in line with local regulations ✔ Maintain accurate records of staff leave, rosters, and schedules (in absence of Executive Chef) ✔ Facilitate strong communication between kitchen, lodge management, guest relations, and butler teams ? Requirements: ✔ Formal culinary qualification essential ✔ Minimum 2+ years’ Sous Chef experience in a 5-star luxury environment ✔ Strong leadership and team management abilities ✔ Excellent attention to detail and ability to perform under pressure ✔ Strong understanding of hospitality operations (kitchen, service, housekeeping coordination) ✔ Computer literate ✔ Passion for guest experience and high-end cuisine ?
