Kendrick Recruitment is seeking an exceptional and highly accomplished Pastry Head Chef to join an ultra-luxury safari lodge in Botswana ; renowned for delivering extraordinary guest experiences in a remote and beautiful wilderness setting. This is an outstanding opportunity for a refined pastry professional who combines technical excellence with creativity, precision and a deep understanding of luxury hospitality. The successful candidate will lead the pastry offering across the lodge, creating beautifully executed desserts, breads and baked goods that reflect the sophistication and individuality of the property. The role requires someone who is equally comfortable developing an elegant culinary concept, leading and inspiring a team, maintaining exacting standards and engaging with discerning international guests. Key Responsibilities Lead the pastry kitchen and take full ownership of quality, consistency and presentation. Develop a distinctive pastry and dessert offering that complements the lodge’s overall culinary identity. Create and refine menus, recipes, presentation standards and seasonal concepts. Produce and oversee a wide range of artisanal breads, viennoiserie, cakes, petit fours, biscuits, ice creams, sorbets and plated desserts. Ensure every item leaving the pastry kitchen reflects exceptional attention to detail and ultra-luxury standards. Continuously introduce fresh ideas, techniques and contemporary pastry trends where appropriate. Work closely with the Executive Chef and broader culinary team to create a seamless and memorable dining experience. Train; mentor and inspire the pastry team, encouraging creativity, discipline and professional growth. Maintain impeccable hygiene, food safety and kitchen standards at all times. Oversee stock control, ordering, portioning and wastage management. Manage food costs and contribute to achieving kitchen budgets without compromising quality. Ensure equipment is used correctly, maintained appropriately and treated with care. Maintain efficient kitchen administration, ordering and shift handovers. Interact with guests where appropriate and contribute to personalised dining experiences. Support sustainability initiatives and responsible sourcing practices. Work collaboratively with lodge management and other departments to ensure exceptional guest satisfaction. Requirements Recognised Chef qualification of at least three years ; or a strong equivalent professional background. Minimum 4 years’ relevant pastry experience ; ideally within a senior role. Previous experience within an ultra-luxury lodge, 5-star hotel, fine-dining restaurant or high-end hospitality environment is highly advantageous. Exceptional pastry and baking skills with strong technical knowledge. A sophisticated understanding of presentation, flavour, texture and modern pastry techniques. Strong menu development and recipe creation experience. Good understanding of food costing, budgeting, stock control and procurement. Proven ability to lead, train and motivate a professional kitchen team. Strong knowledge of food safety, hygiene and kitchen procedures. Good computer literacy and administrative skills. Excellent communication and interpersonal skills. Strong organisational and time-management abilities. Comfortable living and working in a remote safari environment.
