Job Summary
Pastry Chef. Wailoaloa -Nadi Viti Levu - Fiji South Pacific Ocean, east of Australia, north of New Zealand 3 month contract. Vasaqa Fiji - Wailoaloa: Your Island Dining Destination Experience the ultimate taste of Fiji's Wailoaloa location. Indulge in our mouthwatering selection of smoked and roasted meats, expertly prepared with traditional Fijian flavors. Vasaqa Fiji remains the preferred movie production caterer in the country. We have served in this position for Love Island US for the last three seasons (5, 6, and 7) and two seasons of Love Island Games (1 and 2). For this production, we cater for over 500 people daily. Our services range from a café-style concessions bar providing coffee and toasted sandwiches to three buffet-style meal periods for both crew and contestants. The season begins with lunch-only period before shifting into a 24-hour kitchen operation once shooting commences. We aim to run three rotating shifts with a total kitchen brigade of 20 people. We provide transport to and from the site, shift meals, accomodation and uniforms. Please note that this is high-pressure, high-volume work where quality, speed and communication are essential . Overtime may be required and will be compensated accordingly. Requirements : Strong culinary skills and knowledge of diverse cuisines/techniques. Proven experience as a Sous Chef or senior role in reputable kitchens. Excellent leadership, communication, and problem-solving skills. Ability to work effectively under pressure in a fast-paced environment. Commitment to cleanliness, attention to detail, and team development. Key Responsibilities: Leadership & Supervision : Lead; mentor, train, and supervise kitchen staff; delegate tasks, manage schedules, and ensure team adherence to standards. Kitchen Operations : Oversee daily food production, expediting orders, managing station efficiency, and taking charge during shifts. Quality Control : Ensure consistent high standards in food preparation, taste, presentation, and portion control, often conducting daily food tastings. Cost & Inventory : Monitor food costs, manage wastage, maintain proper storage, and support purchasing/receiving standards. Hygiene & Safety : Implement and enforce strict sanitation, food safety (HACCP), and regulatory compliance. Menu & Creativity : Assist in menu development, create new dishes, and design appealing food displays. Salary R 20.190 NETT per month including accommodation, meals & transport.
