The main role of the Senior Sous Chef is to be fully responsible for the management of the kitchen under the Head Chef, in line with the company standard of excellence and standard operating procedures. The Senior Sous Chef would assume responsibility for the kitchen in the absence of the Head Chef. Management of sections of the kitchen and staff canteens. Ensuring the ultimate food experience for the guests, in line with the food concept of the lodge. Effective guest interaction to enhance guest experiences. Supervise the quality of food produced and served in a hygienic manner. Designing of menus – follow and implement new food concepts. Monitoring the quality and care of equipment and products - minimising breakage. Administration of orders to minimize shortages and wastage. Handover responsibilities and requests to the next shift coming on duty and ensure that a handover is received from previous shift, when coming on duty. Strategic management of food to reduce waste, such as portion control and stock rotation. Implement and maintain Health and Safety procedures, such as cleanliness and hygiene of the kitchen kept in the highest standard. Communication with departmental teams to ensure that guest needs are met, and operations run effectively. Focus on skills and knowledge development of staff. Contribute towards the sustainability operations of the lodge, operating within lodge environmental parameters and constantly looking for ways to further ‘green’ lodge operations Active participation in, effective communication and support of the company conservation message and purpose. Performance of other tasks as reasonably requested from time to time and as required by the operation – The company fosters a culture of collaboration and with this a support of the multi-skilling of staff. ???????????? / ??????? / ???? ????? Monthly remuneration: CTC package NEG. DOE - Please advise expectation upon application; Accommodation: Some rooms have one room with a bathroom or a loft room with a lounge and bathroom. Some senior rooms have basic kitchenettes. The rooms are furnished with a ¾ bed or double bed, desk and chair, curtains, cupboard, and bedside table. Most rooms have ceiling fans but due to extreme temperatures; Facilities that contribute to employees well-being and life balance, an opportunity to feel at home and enjoy social gatherings or work functions at the pool, bar, TV lounge and pool table, braai areas, gym and school; Uniform excluding shoes; Onsite staff transport; Utilities – water and electricity, free Wi-Fi, generator; Room cleaning service: mandatory at nominal monthly set contribution fee. Housekeepers wash uniforms, and personal clothing, excluding handwashing, and clean rooms daily; Three meals a day provided at the canteen; The bar is open 7 days a week for drinks, snacks, and toiletries. Any purchases will be charged to the employee’s staff account which will be deducted from the salary; Onsite Paramedic; Medical aid - compulsory for senior staff (Employees can choose their preferred plan); Provident fund – compulsory; Annual bonus at the discretion of management and salary review in January; Gratuities from guests or share in the general gratuity pool; Family friendly; Discounted flight rates between KNP and Johannesburg Work cycle: 6 weeks on, 2 weeks off plus annual leave. ??????????? ???????
