Head Mixologist | Luxury Fine Dining Restaurant Location: Rosebank, Johannesburg Salary: Highly Negotiable (Dependent on Experience) About the Opportunity Our prestigious client is seeking an exceptional Head Mixologist to lead the beverage programme at one of Johannesburg's most luxurious fine dining destinations. This is an opportunity for a passionate, innovative and service-driven professional who thrives on creating unforgettable guest experiences through world-class cocktails, premium spirits and elevated beverage presentations. The successful candidate will be responsible for developing a signature drinks programme, mentoring the bar team and ensuring every beverage reflects the restaurant's luxury brand and impeccable standards. Key Responsibilities Lead and manage all bar operations. Design and develop innovative, premium cocktail menus with seasonal and signature offerings. Create bespoke cocktails and luxury beverage experiences. Maintain exceptional quality, consistency and presentation standards. Train; mentor and inspire the bar team to deliver five-star service. Drive beverage innovation while remaining ahead of international cocktail trends. Manage stock control, ordering, supplier relationships and inventory. Ensure excellent cost control, GP management and minimal wastage. Curate premium wine, champagne and spirits recommendations alongside the culinary team. Maintain impeccable cleanliness and compliance with health and safety standards. Work closely with senior management to enhance the overall guest experience. Deliver exceptional customer engagement and personalised service. Minimum Requirements Minimum 5 years' experience as a Senior or Head Mixologist within luxury hospitality, fine dining or five-star establishments. Demonstrated experience creating premium cocktail menus and signature beverages. Extensive knowledge of premium spirits, whisky, tequila, rum, gin, cognac, champagne, wine and luxury liqueurs. Passion for mixology, creativity and beverage innovation. Strong leadership and team development skills. Excellent understanding of stock control, beverage costing and profitability. Outstanding communication and interpersonal skills. Professional appearance with exceptional attention to detail. Ability to thrive in a fast-paced, high-pressure luxury environment. Flexible to work evenings, weekends and public holidays. Highly Advantageous Mixology certifications or formal beverage qualifications. Experience with molecular mixology, smoke infusions, clarifications and modern cocktail techniques. Wine knowledge and food pairing experience.
