Job Summary
Guest Experience & Service Excellence Deliver personalised, five-star dining experiences across all meal periods. Engage with guests to ensure satisfaction and manage special dietary requirements. Handle guest feedback and resolve service issues professionally and discreetly. Maintain a visible presence during service to ensure standards are consistently met. Operational Supervision Supervise daily F&B service operations including: Restaurant; bar, boma, bush dinners, in-room dining, and safari meals. Ensure service setups, timings, and transitions are executed flawlessly. Coordinate closely with the Kitchen, Front Office, and Safari teams. Conduct pre-service briefings and post-service debriefs. Staff Supervision & Training Supervise waiters, bartenders, hosts, and service assistants on shift. Ensure staff grooming, uniform standards, and professional conduct. Assist with onboarding, training, and ongoing coaching of F&B staff. Support performance management and address minor disciplinary issues in line with company policy. Foster a positive, respectful, and service-driven team culture. Stock Control & Cost Awareness Assist with stock control, requisitions, and stock rotation. Monitor breakages, wastage, and portion control. Ensure correct handling and storage of food, beverages, and equipment. Support cash handling procedures where applicable. Health; Safety & Hygiene Ensure full compliance with HACCP, food safety, and hygiene standards. Enforce cleanliness and sanitation across all F&B service areas. Ensure safe food handling practices at all times. Report and document any health, safety, or hygiene incidents. Administration & Reporting Assist with daily reports, service checklists, and handovers. Ensure accurate guest preferences and dietary notes are communicated. Support the F&B Manager with operational reporting and audits.
