Senior Sous Chef – Luxury Boutique Hotel & Award-Winning Restaurant | Live-out | Salary: R18,000 - R22,000 (DOE) Kendrick Recruitment is seeking a skilled and creative Senior Sous Chef for a 5-star boutique hotel in Johannesburg, home to an award-winning restaurant known for its heritage-inspired dining and elevated culinary experience. This role is ideal for a passionate chef who thrives in refined, intimate kitchens where quality, attention to detail, and storytelling through food are essential. Position Overview Working alongside the Head Chef, the Senior Sous Chef will support oversight of all kitchen operations, help drive menu innovation, uphold fine-dining standards, and lead the kitchen team when required. Key Responsibilities • Assist the Head Chef with menu planning, seasonal dishes, tasting menus, and heritage-aligned cuisine • Lead kitchen operations in the Head Chef’s absence and ensure consistent excellence • Supervise food preparation, plating, service timing, and quality control • Manage food costs, stock rotation, procurement, portion control, and wastage reduction • Maintain hygiene, safety, kitchen organisation, equipment upkeep, and compliance with regulations • Mentor and develop junior kitchen staff and assist with roster and shift planning • Attend service briefings and collaborate closely with FOH to deliver exceptional guest dining experiences • Support administration including ordering, reporting, stocktake, and feedback analysis • Contribute ideas for menu development, service approach, and culinary elevation Requirements • Recognised culinary qualification (Diploma or equivalent) • 3–5 years relevant experience - must be in a fine-dining or luxury boutique hotel environment - essential • Excellent knowledge of food preparation, plating standards, international cuisine, and dietary considerations • Strong leadership, training, and people management skills • Able to remain calm and consistent in a fast-paced premium kitchen • Strong understanding of food costing, ordering systems, portion control, and stock procedures • Passion for food creativity, storytelling, and hospitality excellence Package • R18,000 - R22,000 NEG, dependent on experience • Live-out role - JHB based candidate preferred • Work in a prestigious hotel environment with an award-winning restaurant and high-profile guests • Opportunities for creative growth, mentorship and professional development To Apply Please submit your CV, contactable references, food portfolio and a recent head-and-shoulders photograph ASAP. ?
