Clear criminal record; Excellent employment track record – references will be verified; F&B; Hospitality Management, or equivalent diploma from a reputable hotel school or institution; Approx. 3–5 years’ experience as a Restaurant Manager or Assistant F&B Manager within a large 5-star lodge or hotel establishment; Experience working with both à la carte and set menus while delivering refined service standards; In-depth knowledge of food and beverage costing, cost control, and budgeting; Knowledge of and experience with stock control and POS systems, such as Micros, PlusPoint, or BPM for Sage; Strong understanding of current food and beverage trends and concepts; Fine attention to detail, with a consistently guest-centric approach; Ability to drive change and identify operational efficiencies and synergies; Excellent knowledge of food and beverages, including cocktails, wines, and spirits; Highly presentable, with excellent communication skills and sound emotional intelligence; Ability to multitask, performs well in a fast-paced environment, and meets deadlines; ??? ???????????????? Support the F&B Manager in overseeing the efficient, profitable, and seamless operation of the full food and beverage footprint, including restaurants, bars, room service, and conferencing and events. Assist in ensuring that all guests receive a consistently high standard of product quality and service delivery, while contributing to positive staff performance and a strong service culture throughout the department. Contribute to the achievement of departmental financial objectives by supporting budget control, driving sales, managing costs, and helping to maximise overall operational profitability. Assist in maintaining and enhancing established standards of food hygiene, cleanliness, and safe food handling across all outlets, ensuring full compliance with company procedures and relevant regulations. Support the management of supplier relationships to help ensure the consistent and timely delivery of fresh, high-quality products and ingredients. Assist in controlling all F&B inventory and operating equipment, ensuring that ordering, receiving, stock takes, requisitions, and par level procedures are followed accurately and in line with company standards. Provide leadership, training, mentoring, and ongoing development to the food and beverage team, with a strong focus on improving performance, building skills, and maintaining service excellence across the department. Support effective performance management within the department, including staff accountability, guidance, and where necessary, disciplinary processes in line with company policy. Prepare reports and provide accurate and relevant operational information to the F&B Manager and General Manager. ???????????? / ??????? / ???? ????? Basic monthly remuneration of approx. R15 – R20, 000.00 NEG. PLUS - Accommodation (partly/basically furnished) & own bathroom; 2 meals per day from the staff canteen; Provident fund - 100% coverage by the company; Medical insurance - 100% coverage by the company; Uniform and laundry thereof; Complimentary staff shuttle service is provided for shift transport, with pick-up before each shift and drop-off after each shift for staff living within approximately 20 km of the property in surrounding local communities.
