The successful candidate will take full ownership of kitchen operations, menu design, and team leadership while consistently delivering outstanding cuisine within a remote but prestigious lodge environment. Key Requirements • Minimum 5 years' experience as a Head Chef or Senior Sous Chef within a fine dining or luxury hospitality environment. • Formal culinary qualification essential. • Proven track record in menu creation, fine dining service, and food presentation. • Strong kitchen management, team leadership, and training skills. • Excellent knowledge of food costing, stock control, and kitchen administration. • Knowledge of dietary requirements and the ability to cater to diverse guest preferences. • High standards of HACCP compliance and food safety. • Ability to thrive in a remote lodge setting. Key Responsibilities • Plan, develop, and execute fine dining menus that reflect creativity, seasonality, and luxury standards. • Oversee all kitchen operations, including breakfast, lunch, sundowners, and dinner service. • Lead, manage, and mentor the kitchen team. • Ensure consistent food quality, presentation, and portion control across all service periods. • Manage stock, ordering, food costs, and kitchen budgets. • Maintain exceptional hygiene and food safety standards (HACCP). • Cater to special dietary requirements and guest preferences. • Collaborate with lodge management on guest experiences and special events.
