Hospitality and Outdoor – New Vacancy – Executive Sous Chef Luxury Lodge – Ladysmith, KZN Requirements: · Formal culinary qualification or relevant certification · 4-5 years’ experience in a senior kitchen role · Previous experience in a 4/5-star environment is an advantage · Strong culinary and menu development skills, with creativity and attention to detail · Proven ability to lead, manage, and train a kitchen team (including pastry) · Excellent knowledge of food safety, hygiene, and sanitation standards · Strong organisational and time management skills · Proficient in kitchen administration, stock control, and month-end procedures · High computer literacy (Microsoft Office essential) · Calm, professional, and able to manage pressure and team dynamics · Guest-focused with excellent communication and interpersonal skills Responsibilities: · Oversee daily operations of both guest and staff kitchens, ensuring high standards of food quality, hygiene, and safety · Plan, prepare, and present meals while supporting menu development and new dish creation in collaboration with the Executive Chef · Manage kitchen and pastry teams, including staff training, performance oversight, and handling challenging team dynamics · Maintain inventory, control stock, and manage storerooms effectively · Handle kitchen administration such as ordering, reporting, and month-end procedures · Uphold HR compliance and food safety standards across all kitchen areas · Interact professionally with guests and ensure an exceptional dining experience throughout Package on Offer: · Market related salary – depending on experience · Live – in position Start date: ASAP
