Role Overview: Kendrick Recruitment is seeking a highly skilled and passionate Executive Sous Chef for a luxury hotel in Knysna. This exciting opportunity is ideal for a strong culinary leader who thrives in a fast-paced hospitality environment and is committed to delivering exceptional dining experiences. The successful candidate will play a key leadership role within the kitchen, supporting operational excellence, team development, stock control, menu execution, and maintaining the highest culinary standards across the property. ? Requirements: • Minimum 2 years’ experience in a similar senior kitchen leadership role • Relevant culinary qualification essential • Previous experience within a busy hotel or restaurant environment • Strong leadership and team management skills • Excellent knowledge of kitchen operations, stock control, and food costing • Strong organisational and communication abilities • Computer literacy with the ability to learn stock and property management systems • Valid South African ID required • Ability to perform effectively under pressure ? Key Responsibilities: • Lead and manage the kitchen team to deliver consistently high-quality cuisine • Oversee stock control, ordering, stock rotation, and regular stock takes • Ensure food cost targets and gross profit objectives are achieved • Cost, implement, and train staff on recipes and menu items • Build and maintain strong supplier relationships • Ensure excellent hygiene, health, and safety standards are maintained at all times • Liaise with guests and departments regarding dietary requirements, events, and special requests • Support the General Manager and F&B Manager with operational requirements • Manage kitchen rosters, staffing levels, and team performance • Conduct staff training, induction, coaching, and disciplinary processes where necessary • Foster a positive, productive, and professional kitchen culture ?
