Job Summary We are seeking a highly skilled, creative, and detail-oriented Pastry Chef to join the pastry and dessert section of our kitchen. The successful candidate will be responsible for the production of premium pastries, desserts, baked goods, and confections that meet the highest standards of quality, presentation, and Halaal compliance. This role plays a key part in supporting restaurant service, catering events, functions, retail offerings, and special occasions. Key Responsibilities Plan; organise, and execute daily pastry production, including mise en place, baking, and finishing for all service periods, events, and catering orders. Prepare and innovate a wide range of items: pastries, cakes, tarts, pies, cookies, breads, viennoiserie, chocolates, plated desserts, and seasonal specials. Ensure all creations are visually stunning, consistent in quality, and meet portion control and costing standards. Collaborate with the Kitchen Manager and Head Chef on menu development and event requirements. Manage pastry inventory: ordering, receiving, stock rotation (FIFO), storage, labelling, and expiry control. Maintain strict adherence to food safety standards (HACCP & R.638), hygiene, sanitation, and allergen management. Oversee equipment maintenance (ovens, mixers, proofers, etc.) and ensure the pastry section is kept clean and organised at all times. Complete all required documentation accurately and on time, including production logs, temperature records, waste sheets, and Food Setup Sheets for events. Participate in kitchen audits, inventory counts, deep cleaning schedules, and performance reviews. Support large-scale event preparation, packing, and dispatch as needed. Requirements & Qualifications Education & Certification Formal qualification in Pastry & Confectionery / Patisserie from a recognised culinary institution (essential). Knowledge or willingness to be trained in Halaal food preparation principles. Experience Minimum 3–5 years’ experience as a Pastry Chef or in a busy hotel, bakery, or catering environment. Experience with high-volume production and event catering is highly advantageous. Skills & Competencies Advanced skills in pastry, baking, chocolate work, sugar work, and dessert presentation. Strong creativity and ability to develop new recipes and seasonal offerings. Excellent attention to detail and consistency under pressure. Good understanding of food costing, inventory management, and waste reduction. Leadership and training abilities. Ability to work early mornings, weekends, and long hours during peak periods.
