Job Summary
A luxury safari lodge situated within a renowned Big 5 reserve in KwaZulu-Natal is seeking an experienced HEAD CHEF to join their team. The successful candidate will assist in overseeing the kitchen operations across two luxury lodge properties, including hot kitchen, cold kitchen, baking, and scullery operations. The role requires a strong focus on consistency, presentation, hygiene standards, training, guest interaction, and innovative bush dining experiences. Candidate Responsibilities: Assist in managing the day-to-day operations of multiple lodge kitchens Ensure kitchen hygiene and food safety standards are maintained at all times Train; mentor, and develop junior chefs and kitchen staff Ensure all menus and food presentation align with company food styling standards Remain up to date with current food trends and innovative culinary concepts Create memorable bush dining and banqueting experiences for guests Monitor food quality, consistency, and presentation across all meal services Oversee stock control, stock rotation, food ordering, and storeroom management Manage fridge, freezer, and food storage controls effectively Ensure all guest meals, snacks, and special requests meet luxury lodge standards Handle special dietary requirements proactively and engage directly with guests where necessary Conduct regular checks on breakfasts, lunches, dinners, buffets, and game drive snacks Maintain strong communication within the kitchen team and with operational departments Promote teamwork, discipline, and a positive kitchen culture Assist with kitchen administration, including GRVs and stock systems Ensure proactive kitchen maintenance and cleanliness standards are upheld Core Criteria: Previous experience as a Head Chef or Senior Sous Chef within a luxury lodge or hospitality environment Previous luxury safari lodge experience highly advantageous Passion for kitchen management, food presentation, and guest satisfaction Strong leadership and staff training abilities Creative flair and ability to deliver exceptional dining experiences Strong understanding of stock control, kitchen administration, and food costing Excellent organisational and communication skills High attention to detail and sense of urgency Ability to work well under pressure in a remote lodge environment Positive attitude with a willingness to mentor and inspire others Valid driver’s licence essential This is a live-in position.
