Pastry Chef de Partie – Private Nature Reserve | Gansbaai | R12,000 – R18,000 Negotiable DOE | Live Out A private nature reserve in Gansbaai is seeking a skilled Pastry Chef de Partie to manage the pastry section of the kitchen and contribute to delivering exceptional dining experiences. The successful candidate will have strong technical skills, creativity, and the ability to maintain high standards in a luxury lodge environment. Key Responsibilities: Manage and oversee the pastry section of the kitchen. Prepare pastries, desserts, and baked goods to the highest standard. Ensure all mise-en-place is freshly prepared and available on time. Maintain consistency in taste, portion size, and presentation. Supervise and mentor junior pastry staff, providing guidance and training. Ensure the pastry section is kept clean, organised, and compliant with hygiene standards. Collaborate with Sous Chefs and Head Chefs to plan seasonal menus and new creations. Monitor ingredient stock levels and communicate any shortages promptly. Assist with special events, private dining, and dietary requests as required. Maintain discipline and professionalism within the team. Requirements and Skills: Proven experience as a Pastry Chef de Partie in a luxury hotel, lodge, or fine dining environment. Strong technical skills in pastry, desserts, and baked goods. Creativity and attention to detail. Leadership and mentoring skills for junior staff. Knowledge of food safety, hygiene, and stock management. Ability to work under pressure, independently, and as part of a team. Flexibility to work shifts, weekends, and holidays. Package and Benefits: Salary negotiable, depending on experience.
