Job Summary
This gorgeous family owned farm in Clarens produces a range of their own artisanal goods including a speciality range of cheeses, wood-fired sour dough breads, freshly picked veg and herb garden produce, farm-made preserves and condiments, lemonade, ginger beer, ice cream, delectable cakes, espresso-based beverages just to name a few. ProStaffSelect are in search of a HEAD CHEF to manage, plan and coordinate kitchen operations, inspire, innovate and engineer exciting dishes, run & facilitate service, deal with suppliers and to make extensive use of all the farms’ homemade items. The ideal candidate will need to exhibit a deep understanding of artisan made items made ion the farm especially CHEESE PRODUCTION, SOUR DOUGH BAKING and FARM TO TABLE CUISINE. REQUIREMENTS: Recognised Cheffing Qualification. Minimum 3 years’ experience within a head chef position in a similar Artisan Bistro-type operation. Excellent all-round knowledge of cheeses and the production process, artisan bread baking, pastries as well as HOT & COLD Food Production Ability to engineer and create menus with daily changing specials. Friendly and outgoing personality with excellent communication skills. Must be PASSIONATE about food, know your basics, display a positive attitude and truly excited about your cheffing career and goals. Demonstrate strengths in food costing, stock controls and waste management Efficient computer skills as well as a working knowledge of Point-of-Sale systems Experience in managing staff, handling HR issues, disciplinaries etc Exceptional planning & organisational Skills Strong leadership, management & staff development skills Hands-on operator who leads by example
