Start Date: URGENT Position Overview This prestigious wine estate, renowned for its elegant venue and frequent high-profile weddings and events, is seeking a skilled and motivated Sous Chef to join its culinary team. The successful candidate will support the Head Chef in delivering elevated fine-dining experiences, banquet events, and boutique weddings. You’ll be part of a dynamic environment where precision, creativity, and seamless execution matter every time. Key Responsibilities Assist Head Chef in menu planning, preparation and execution for both everyday fine-dining service and special events/weddings. Supervise kitchen operations during service and event functions, ensuring high standards of food quality, presentation, hygiene and timing. Lead and mentor junior kitchen staff; work as part of a leadership team to ensure seamless service. Manage stock control, ordering, waste management, portion control, and cost-effective operations. Coordinate kitchen involvement for weddings, banquets and large-scale events: prep, timing, service flow, coordination with venue and service teams. Uphold food safety, hygiene and kitchen regulatory standards consistently. Work under pressure and adapt to changing service requirements (events, weddings, seasonal bookings). Requirements & Experience Minimum 3–5 years’ experience as Sous Chef in a fine-dining or luxury hospitality environment. Proven experience coordinating or working in events/weddings kitchen service is essential Recognised culinary qualification/diploma or equivalent professional training. Strong leadership, communication and organisational skills. Detailed understanding of kitchen operations, cost control, and fine-dining plating/presentation standards. Professional; polished appearance and excellent guest-service ethos. Flexibility to work weekends, evenings and during high-volume service periods. Based in Stellenbosch/Cape Winelands or willing to relocate at own cost (live-out role).
