We have an opportunity for an Assistant Restaurant Manager to join our team in Stellenbosch on a full time basis.
REQUIREMENTS
- Grade 12, wine course/WSET level 1 or 2 will be advantage
- 2-3 years previous restaurant supervision experience
- Wine tasting/sommelier experience will be advantage
- Must have experience in a 5* establishment in a similar role, preferably in a fine dining environment
- Own transport
- POS, Microsoft office experience
- Must have knowledge of wine, preferably wine pairings with food
- Team management abilities
- Availability to work within opening hours (e.g., evenings, public holidays, weekends)
- Excellent interpersonal- & communication skills
- Strong customer service orientation with a vibrant, enthusiastic personality
- Ability to maintain a professional working relationship with all departments
- Must be well-presented and comfortable in dealing with very distinguished clientele

Job description
- Communicating relevant information to the Restaurant Manager, Head Sommelier, Team and Guests
- Coordinate communication between front of house and back of house staff, with coordination of floor management
- Engaging with the guests in the Restaurant by being present, keeping an eye on service and constant interaction with guests always responding to their needs
- Work together with the waiters and Chefs to ensure a flawless food service delivery
- Doing daily cash-ups and notifying any other departments/suppliers of relevant information
- Monitor compliance with safety and hygiene regulations
- General administrative duties, including record keeping, staff management & training
- Assist the Head Sommelier with updating the wine lists
- Assist the Head Sommelier with maintaining all stock levels
- Assist the Head Sommelier with wine service, wine recommendations, to guests
- Ensure all stock rooms are kept clean, neat and tidy
- Ensure all stock rooms are packed accordingly to your stock sheet to assist with stock take
- Ensure all wine service areas are set up and ready for service
- Assist in receiving orders
- Assist with stock taking and replenishing of stock
- Assist in wastage control of all beverages
- Assist in capturing all stock transfers
- Communicating relevant information to the Villa Manager, Chef, team and Guests
- Coordinate communication between front of house and back of house staff
- Engaging with the guests in the Villa by being present, hands on and constant interaction with guests anticipating their every need
- Assist the Head Sommelier with maintaining stock levels in the wine cellar
- Assist the Head Sommelier with wine cellar stock take and replenishing
- Ensure wine cellar is full at all times
- Ensure beverage service areas are set up and ready for service
- Ensure table settings are set up in time for service and guests service time requests are met
- Basic day to day administration as required and requested by the Villa Manager
- Coordinate site inspections of Villa in Villa Manager’s absence
- Coordination of in-house beverages, styling, making, stocking of in accordance to villa guest requests (i.e. cocktails, wine service, recommendations)
