SPECIALISED SWEET MAKER
Research and Development
• Development of Specialised Hard boiled candies and and Lollipops in forming lines as well as in depositing equipment
• Development of Éclairs Butter Toffees for cut and wrap as well as deposited
• Development of Chocolate base and Centre filling recipe’s for moulded chocolate,
• Development of Nougat and caramels for enrobing lines.
• Development of flat and roll wafers and layering centre cream.
• Development of Pectin based Deposited Jelly’s, and Cup Jellies.
• Designing of packing materials, cylinders for printing, and packing material structures.
• Following the guidelines of FSSAI, ISO 22000 & HACCP. Ensure HACCP & ISO 22000 Food safety management system is in place and have been monitored regularly and revived.
Food Safety and Quality Control and Assuance
• Implementation of Food Safety and Quality Management System across the organization.
• Implementation of Good Manufacturing Practice and Good House Keeping.
Standards and Process Control
• Ensure process parameters. ( Ph, Brix, Temperature, Drop weight, Cream % Colour, flavour, taste Acidity and TRS)
• Ensure packed products are within stanadard norms (Number of Counts, wrapping quality, batch code prods. Expiry date, capping and labelling).
Salary: R40 000 to R50 000 per month
